A national leader in commercial meat processing and food distributior is expanding its Queensland operation following continued business growth and increased customer demand.

We are seeking experienced Specialist Butcher Portion Cutters and Bandsaw Operators to join a friendly and well structured team in Lytton. These are hands-on roles suited to skilled meat industry professionals who take pride in precision cutting, consistency, presentation, and working in a fast-paced production environment.

This is an excellent opportunity to secure stable, ongoing work with a respected business supplying premium meat products to pubs, clubs, restaurants, hotels, and foodservice customers across Queensland.
 

Available Roles:

Specialist Portion Cutter / Butcher

Responsible for precision portion cutting and preparation of premium beef products to exact customer specifications.

Experience working with key meat cuts, including:

• Rump
• Rost Biff
• Cube Roll / Rib Fillet
• Striploin
• Tenderloin

Key Duties

• Produce consistent, portion-controlled steaks and premium cuts for hospitality and food service customers, with a strong focus on quality, presentation, and accuracy.
• Perform knife work including trimming, slicing, mincing, and dicing across beef, lamb, and pork products while maximising yield and minimising waste.
• Work efficiently to daily production targets while maintaining high food safety, hygiene, and quality standards.

 

Specialist Bandsaw Operator

Operating modern bandsaw equipment fitted with industry-leading safety technology to prepare bone-in meat products.

Experience cutting a range of bone-in products including:

• T-Bones
• OP Ribs
• Lamb Chops
• Pork Chops

Key Duties

• Operate bandsaw equipment to accurately cut and portion bone-in meat products to specification, ensuring consistency and product quality.
• Assist with trimming, vacuum packing / Cryovac, and general butchery and specialised portion cutting duties across the production floor as required.
• Maintain safe equipment operation, hygiene standards, and production efficiency while working to daily schedules and targets.

About You

To be successful in either of the roles above, you will have:

• Previous experience as a butcher, specialist portion cutter, or in a commercial meat processing environment is required. (Experienced knife hands with specialist portion cutting skills are encouraged to apply.)

• Strong experience portioning beef for hospitality or foodservice customers
• Experience operating a bandsaw in a meat processing or butchery environment (Bandsaw Operator)
• Experience cutting bone-in meat products (Bandsaw Operator)
• Ability to cut consistent, portion-controlled steaks to specification
• Strong knife skills and understanding of beef primals, yields, and cutting efficiency
• High attention to detail and product quality
• Ability to work to production targets and deadlines
• Good understanding of food safety, hygiene, and HACCP practices
